Ruby Rise Pina Colada Papaya Boats

  • 1 ripe Ruby Rise Red Papaya

  • 1 cup (160g)  frozen pineapple chunks

  • ½ cup (125ml) coconut milk

  • 30g rolled oats

  • 1 lime, juiced, plus extra to serve

  • Toasted coconut flakes, to serve

  • Edible flowers, to garnish (optional)


  • Prepare the papaya. Halve your Ruby Rise  papaya lengthways and scoop out the seeds with a spoon.

  • Blend the smoothie. Blend the pineapple, coconut milk, oats and lime juice  in a blender until smooth.

  • Serve Spoon the smoothie mix into your Ruby Rise papaya boats, and top with toasted coconut flakes. For that extra tropical feel, garnish with a few edible flower buds.

Tip - If you like your smoothie bowl extra tropical and zesty, squeeze extra lime juice on your Ruby Rise papaya boat before serving!
