½ Ruby Rise Red Papaya, seeds and skin removed, sliced
2 slices sourdough bread
50g greek feta
1 tablespoon dukkah
Fresh mint leaves and lime
¼ cup pine nuts
¼ cup sunflower seeds
2 tablespoons sesame seeds
½ tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon nigella seeds (optional but yum)
2 teaspoons sea salt
Toast bread to your liking then top with slices of Ruby Rise Red Papaya, feta and a squeeze of lime, followed by mint leaves.
Place all ingredients in a large fry pan on medium heat and toast 5-8 minutes or until seeds are lightly golden and spices are fragrant. Stir frequently.
Once cooked transfer half the mix to a mortar and pestle or a spice grinder and blitz quickly or grind until broken into smaller crumb like pieces. Sprinkle over the toast. Store in an airtight container.
