Papaya Jelly With Thriving With Plants

Ingredients:

Flesh of 1 ripe Ruby Rise Red Papaya (approx. 275g)

100mL fresh orange juice (from 1 orange)

1 tsp orange zest

1 tsp lemon zest

1 tbsp lemon juice

300mL water

8g agar agar powder

75g caster sugar

Method:

1. Add the papaya, orange juice, orange zest and lemon zest into a blender. Blend well until completely smooth.

2. In the meantime, add the water, agar agar and sugar into a small saucepan. Whisk well and bring to a gentle boil. Turn down the heat and simmer for 5 minutes. Pour the papaya mixture in, stir well and cook on low for another 3 minutes.

3. Pour into 6 silicone cupcake moulds (or any shape you desire). I also used a small amount to pour into tiny heart moulds. Allow to cool at room temperature slightly then pop into the fridge to set for at least 2 hours.

4. When ready to serve, pop out of the moulds, decorate and serve.
